Our gourmet bacon begins with a lean imported slab that gets hand-trimmed and loaded into our traditional log pit smoked in small batches. Each batch is mahogany-smoked by our dedicated Smoke Master for 24 hours to bring out as much flavor as possible. Once the bacon is removed, it is cooled and then sliced or packaged. This painstaking three-day process is a labor of love, as we believe that the best smoked meats are never mass-produced.
